Reprocessing Salsa - Bread With Soup

I was using a new canner for the first time and while processing salsa I could not get the 10# control to jiggle. I processed for approximately an hour and the canner was under pressure during that time. All the lids are sealed but I’m not sure they reached the 10#’s of pressure required. I now know that the weight was not on all the way. Should I reprocess the salsa? It has been 8 hours since I processed them.

If a jar is not sealed, you can reprocess within 24 hours. When reprocessing, pour salsa from jar into a pan and heat to boiling, then pack into a clean, hot jar. Wipe jar rim clean. Use a new lid and screw on metal band, then process for full time listed.

If a jar doesn't seal after processing, you can reheat that salsa and try processing it again with a new lid if you like, but I usually just freeze any jars that don't seal as it doesn't seem worth the effort to reheat and sterilize everything.

Ladle the salsa into your sterilized canning jars, seal, and place in a water bath for 15 minutes.

How long do you let salsa sit after canning?

Not you, the jars. Once you've removed them from the water with the tongs and set aside onto a flat surface. Leave the jars undisturbed for 12 to 24 hours.
