The canner began coming to pressure, steam started shooting under the pressure gauge.

The jars began to seal when I opened the canner to fix the gasket. I reprocessed them all without putting new lids on (some were sealed), will the food still be good in those sealed jars?

If the canner pressure dropped suddenly from high pressure (either because a valve or gasket failed catastrophically, or because you quick-released the pressure), I might worry about the contents having boiled up, compromising the seals. But if the canner just failed to pressurize on the first try because of a leaking gasket, I don't see any reason for concern.

Can you over process canning jars?

"If jars are overfilled, the contents may siphon or boil out during processing," Piper explains. "Any food residue remaining on the jar rim, such as grease, juice, seeds, or pulp can prevent the formation of an airtight seal." Which is why you should also wipe off the jar rim after filling!

Is it okay to leave jars in pressure canner overnight?

They're benign, but will make food unpalatable to say the least, so while it's a good idea to remove jars to cool, if you don't you risk spoilage, but not anything actually harmful.
