How do you know beef ribs are bad?

The best way is to smell and look at the beef ribs: signs of bad beef ribs are a sour smell, dull color and slimy texture; discard any beef ribs with an off smell or appearance.

Is it OK if beef ribs are pink?

If the middle of the meat is still pink with blood, you should continue to put it on the grill and continue cooking. The color in the center of the rib should be white or slightly tanned. If you still see pink color and a little juice, it means the ribs are undercooked.

How should beef ribs look when cooked?

Eating undercooked or raw poultry or red meat increases your risk for becoming infected with salmonella. Symptoms include abdominal cramps, fever and diarrhea and begin within 12 to 72 hours of consuming contaminated food.
