It's a low-acid vinegar from the Alsace region of France, made with spirit (alcohol) vinegar and honey, and infused with herbs. There is a version of it available on Amazon.

I can't find anywhere to buy it here in Spain. Does anyone know where I may be able to purchase it or order it online for delivery to Spain? Alternatively, can somebody recommend a substitution?

What is Melfor vinegar?

Melfor is a classic you will find in every Alsatian kitchen. Made from alcohol vinegar, honey and plant infusion, it is as flavorful but less acid than classic vinegars. Melfor is the perfect base for vinaigrette dressing.

Unlike the whole range of balsamics, though, the stuff you find in stores labeled sherry vinegar varies comparatively less in quality and has fewer low-quality imitators. The base is sherry wine, and the type of grape used to make the wine determines the dryness of the vinegar.
