Spare Ribs: spacing out the soak and the grill

Spare Ribs: spacing out the soak and the grill - Metal gray grill texture with holes

A specific recipe I like for preparing ribs involves a slow four hour soak at 250 degrees in the oven and then a grilling period. I was wondering, how badly is it going to affect the end result if I do the four hour soak the day before, and then placing them in the refrigerator to be grilled the next day?

This will have almost no impact (if any) provided you wrap them well using a cellophane wrap. This is also a good opportunity to apply a rub to the meat.

How should ribs be placed on the grill?

Place the ribs right on the grill, using tongs to maneuver them into place. Grill, covered, over indirect medium heat for 30 minutes on each side. After the first hour, move the ribs to direct medium heat and cook 20-40 minutes longer, or until the pork is tender (more on this in a minute).

How long does it take to grill spare ribs on the grill?

Place pan of ribs onto grill. Cover grill and cook for about an hour (maintaining 300f degrees during the cooking process.) You may need up to 2 hours for these ribs so plan accordingly (especially if you are having difficulty keeping the temperature at a consistent temperature.)

What temperature should fall apart ribs be?

Fun fact- ribs are actually cooked when they reach 145 degrees, but the collagen and fat breaks down between 190 and 205 degrees, giving you that fall off the bone, delicious and juicy rib you want.

How do you stack ribs on the grill?

Stack the ribs, with the bone sides facing down, moving the top rack to the bottom, the bottom rack to the middle, and the middle rack to the top. Cook above the foil pan, over low heat, with the lid closed, for another 45 minutes. Undo the stack of ribs on the grill again.
