In my experience they take longer to render than pork gelatin. They can also add off flavors if not treated properly (similar to tendon); blanch them in a couple of changes of water before you use them.

We often roast bones to make the broth aromatic.

In other dishes, we often roast pig's feet before stewing them. So if you put cow feet in ph?, maybe you should try so.
