I have recipes that call for dry roasting peanuts, coconut, and sesame seeds. I make these recipes a lot — so theoretically it would be easier to dry roast everything I have one time, instead of each time I'm making a dish. Would that in any way diminish the taste of the dish? And does the same apply to spices?

Properly stored, dry roasted nuts should lose none of their flavour. Keep them in a well sealed container and they will be fine.

Spices, however, should be freshly toasted, because the point of doing so is to encourage them to release their flavourful oils.

How do you get spices to stick to roasted nuts?

To get the spices to stick to the nuts, use egg white, butter or blanch the nuts in boiling water (see my recipe below). Some recipes call for nuts to be fried in oil prior to seasoning, but this adds unnecessary fat-- you can make them just a delicious without all the extra calories.

Can you dry roast nuts?

Roasting nuts deepens their flavor, making them even more nutty and complex. It also gives them a crisper texture, which is one of the reasons we add nuts to our food. There are two basic ways to roast nuts in the oven: dry or with a small amount of oil.

Do I need to soak almonds before roasting?

Soaking almonds may improve their digestibility and increase the absorption of some nutrients. You may also simply prefer the taste and texture. Yet, you don't have to soak these nuts to enjoy their health benefits.

Can you roast pre roasted nuts?

If they are pre-roasted, they might actually burn. If your nuts do not sit on the outside at all, but stay within a cake for instance, roasting will be helpful (see next point). It won't get hot enough within the cake for them to burn.
