Lupini beans are an ancient and delicious snack food widely consumed around the Mediterranean and elsewhere. But they naturally contain high levels of toxic alkaloids, so they require special preparation. Allegedly people used to suspend them in a cloth bag in a stream. More usual these days is to soak them in water or brine for at least a week, frequently changing the liquid. Some recipes recommend boiling them first.

What's the most efficient (nonetheless safe) way to remove the toxins from lupini beans?

Best Answer

The most efficient and safe way would be buying seeds from the newer cultivars of sweet lupins (e.g. "Australian Sweet Lupin") which contain so little alkaloids that they don't taste bitter any more - hence the name.

These cultivars are used as alternative protein source, especially in the vegetarian and vegan cuisine.

How do you prepare lupins to eat?

Put 1.5 l of water in a pot and bring it to boil. When the water begins to boil, pour 100 g of salt and stir with a wooden spoon to completely dissolve the salt. Add the lupins and leave them cooking for a minute. The lupini beans are finally ready to eat!

How long do you have to soak lupini beans?

Soak the dry Lupini Beans for 24 hours in water; ensure beans are completely submerged. Rinse and place in a large pot with cold tap water. Bring to a vigorous simmer and boil for 20 minutes. If necessary, keep adding water to keep the beans completely submerged.

Do you have to cook lupini beans?

There's a bitter variety that takes longer to prepare as it needs to be soaked for several days in water, and water needs to be changed every few hours or at least every day. Then the beans need to be cooked, and if they're still bitter then they need to be soaked again in water.

Do you eat the skin of lupini beans?

Lupini beans are commonly sold in a brine in jars (like olives and pickles). They can be eaten by making a small tear in the skin with one's teeth and "popping" the seed directly into one's mouth, but can also be eaten with the skin on. The skin can also be removed by rubbing the bean between forefinger and thumb.
