On frying cooked, parboiled rice from yesterday, some grains jumps out of the pan every other second, creating a mess. Is there a way to avoid this?

Best Answer

I think it might be due to the fact that it is parboiled and still slightly wet. When stir frying, you're probably adding oil, so I think the popping might be due to the condition of having water with oil. When making fried rice, I use "day old" rice. This rice has a slightly firmer texture, so that it stands up to stir frying, and it is not damp like fresh or parboiled rice.

Give this a shot and let me know if your fried rice still comes out like you want it to.

How do you fry rice without it popping?

Regarding the clumping, I learnt a tip from Chinese cooking shows: microwaving the rice just before you fry it helps to break up the clumps. Also on clumping: breaking up rice is easier while it is still warm than after sitting overnight in the refrigerator.

Why does my fried rice keep coming out mushy?

Use cold, leftover cooked rice. Left in the fridge overnight, the rice grains will firm up, making it easier to separate and decreasing the chances of your fried rice turning out mushy. If you can't wait, air freshly cooked rice to remove moisture and refrigerate the rice for a few hours before cooking.

Why does my rice pop?

As Today I Found Out explains, when the water boils, the starch from the rice (or pasta) coats the boiling bubbles, and it is this coating that keeps the bubbles from popping and deflating as quickly as they normally would. Steam then pushes the bubbles up and up, eventually spilling out of the pot.
