I want to avoid rice due to my diabetes. So can I make idli only with urad dal? Currently, I am using rice rava and urad dal in the same proportion and the idli comes out nice. Thank you

You can also do it with Yellow/green Moong Dal or Millet. I used this recipe before - it's a mix pf Urad Dal and Millet https://masalachilli.com/proso-millet-idli-no-rice-idli-recipe/

Why are my idlis not fluffy?

\u2013 If your idlis are too flat, it could be due to two reasons. One, there's too much urad dal in the batter and two, the batter is too watery. Even if you end up adding too much urad, if your batter is thick, the idlis will be fine but too much water will create flat idlis and there's really no way to fix this.

What happens if idli batter is watery?

The main reason is watery or runny batter. Watery batter will not rise and the idlies will be hard and flat. So use caution while grinding and do not add too much water while grinding. The batter will thin out a little after fermentation.

Can we make idli if batter is not fermented?

What to do if idli batter does not ferment or rise? If your idli batter has not risen or fermented after 18-24 hours (traditional method) & 12-14 hours (Instant Pot), then just give up on making idlis with this batch, and use batter for dosas instead. And try again after implementing all the tips shared in the recipe.

What can I use instead of idli rice?

3. Take \xbc cup thick poha (flattened rice or parched rice) in a bowl. Poha helps in making the idli soft and fluffy. If you don't have poha then you can skip it.
