I hav made carrot pickle in lemon juice 15 days ago . some white spots are formed on the top of the pickle and at the sides of the glass jar. Is the pickle safe to consume ? enter image description here

I think it is not very safe to eat because those white spots are fungi.

Why are there white spots on my pickles?

A cloudy appearance or a white sediment may indicate the use of table salt rather than canning or pickling salt. Yeast develops and settles to the bottom of the jar. It may be a normal reaction during fermentation caused by bacteria. If the pickles are soft, they are spoiled from the yeast fermentation.

Why do pickles get fungus?

Exposed to moisture, pickles can turn rancid and bitter in taste. Oil is not water soluble; hence, water destroys the surface of the pickle by not dissolving in the oil. It may cause fungus to form on the layer of the pickle, damaging most of the portion.

Why do we keep pickles in sunlight?

The acid that is produced acts as a natural preservative and prevents the growth of pathogenic bacteria that could cause the pickle to go rancid. Direct sunlight or adequate ambient light provides the warmth required for the bacteria to go about the business of fermentation.
