When I bake vegetables in my wok, I see small black specks appear on the vegetables. Does this mean that the fire is too high, or that my wok is not well enough prepared? How do I find out?

This could be either just soot - but assuming you clean your wok well between uses, it might be that the anti-sticking layer is coming off. If it's the latter, replace the wok - this stuff is pretty toxic when ingested.

How do you get black residue off a wok?

One of the simplest ways to remove the residue is by using salt. Yes, that's right, salt. Take an oily paper towel (it's best to use the same type of oil you season the pan with) and use it to rub salt over the bottom of the pan.

Why is my wok flaking?

The most likely problem is that you let oil pool in the bottom of the wok during seasoning, so it didn't polymerize properly. Personally, I would scrub that portion off, and reseason only the bottom, using this method: Heat the wok to smoking hot.

What do you mean, 'seasoning' a wok? To 'season' a wok doesn't mean drizzling it with salt and pepper, but rather is the process of creating a protective layer, or 'patina', over the wok's inner surfaces.

Can you use a scratched wok?

Dry over low heat on the stovetop until all the water has evaporated. Your spatula will cause scratches, but scratches give your wok character. As you continue to cook with your wok, the scratches will fade as the patina deepens. A new wok is thirsty for fat, so use it to cook bacon or for deep-frying.

Non stick is a bad choice for a stove top wok as the temperatures produced can exceed the acceptable temperature range of the coating; if you have one of the electric plug in woks, they don't get hot enough to do a good job. In either case, get a steel wok, you can see if it's clean, and sand it or steel wool it or use abrasives on it if it gets messed up and you can get it red hot without damage.

Really really cheap ones work just as good as the expensive ones, just make sure they come with a burner ring.
