I'm getting ready to heat up a pre-prepared meal (the ones that are kept in the freezer), and the instructions say to place in a pan and cook on high heat for three minutes.

When should the three minute timer start? As soon as I turn on the heat, or after the pan is nice and hot?

If you cook (or bake) using a timer, you should always use preheated equipment. Your stove top may differ from my stove top in terms of the length of time it would take to get to high heat (hell, my stove top wouldn't even hit high heat in three minutes), and this would greatly effect the final quality.

Always preheat, the instructions expect it. Otherwise, it would tell you to put a pan on the stove top, place in pan, and turn on to high heat. Leave for three minutes and remove.

Should you preheat a pan before cooking?

The simple act of preheating your skillet properly will stop your food from sticking the majority of the time. When a pan is properly preheated, the moisture in the food wicks away from the surface of the pan, and the fat that you add to the pan makes a slip and slide for your food on top of that hot pan.

How long should you wait for a pan to heat up?

If the pan is fully heated and expanded, there's nothing to stick to. So if you're going to pan-fry or sear or saut\xe9 something, always preheat your pan heat for two or three minutes.

Why should you wait until the pan is hot?

A pan is hot enough to cook eggs when a drop of water will sizzle on it. You want that coating of fat to immediately start cooking the egg. If it's not hot enough, the egg will basically push the butter out of the way so the butter winds up on TOP of the egg rather than underneath it.
