I have an old family recipe for something called a Chocolate Salami (don't worry, there isn't any meat) and I am wondering - if I vacuum seal it, will it be shelf stable?

I know the stability of butter and chocolate is exceptional but I'm wondering if anything changes when they are combined?

The recipe calls for the following: chocolate, butter, powdered sugar, crushed up crackers, and hazelnuts. The only cooking in the process is toasting the nuts and melting the chocolate/butter.

If unopened and stored properly, dark chocolate lasts 2 years (from the day it was made). If opened, but still stored properly, the rule of thumb is one year. As for milk and white chocolate bars, the time available is cut in half. One year if unopened and stored properly, and 6-8 months if opened and stored properly.

Keep it at room temperature or in the fridge for up to two years. Dark chocolate: Unopened bars should last at least two years. If you've already helped yourself to a few squares, it still has one year left to go (if you don't devour it by then, that is).
