To make Paella: What is best practice to cook the rice?



Best Answer

Best practice: You fry the vegetables and the meats. You 'fry' the rice in oil (extra virgin olive, of course). Just make sure all the grains are covered with oil (don't deep fry) Then you add a hot broth. Leave it on a nice flame for about 10 min. Put in a hot oven for the remaining 10 min. Done.

Best practice: The paella (the pan) should not be crowded with rice. Too much rice will not give a good result.

Paella with onion is not paella (don't ask me why, as peppers can be added). In theory, onions will add moist to the rice and will make it 'pass' it's point.

The rice should be 'al dente' done but not overdone.

Leave the paella in peace for about 5 min, covered with a newspaper.

What rice is used in paella?

The most commonly used rice in paella in Spain is called Bomba. It's a short-grain rice cultivated in the eastern parts of Spain. It absorbs liquid very well, but stays quite firm during cooking. In supermarkets, it's often labelled as Paella rice.

Is paella the same as rice?

However, different types of rice are in fact used for both dishes. Paella is mainly made with the rice types of Bomba rice, Redondo rice, or Albufera rice. Bomba rice is the most famous and the most luxurious of these rice types, but the more affordable Redondo rice is most commonly used to make paella in Spain.

Can you use plain rice for paella?

The key to the perfect paella is the rice. It is important that you use short grain rice. Medium grain is acceptable, but long grain rice is simply out of the question. As mentioned in the introduction, bomba rice is the perfect rice for paella.

Should rice be cooked before adding to paella?

Add the rice to boiling liquid (or add boiling liquid to the rice) and keep the fire hot so the liquid keeps bubbling for several minutes. Then turn down the heat. Cook paella and other rice dishes uncovered. Unlike risotto, they are not stirred after the first bubbling stage.
