Re-Heat meringues after having them in the fridge for a long time? - Two women in bathrobes sitting on floor and having break with cup of tea

Three weeks ago I tried to make meringues. Unfortunately I left them in the oven for too short, and thus they were quite soft. Thus I put them in the fridge. Now I took them out again, and noticed that they were quite soft again (due to taking water). I put them now again in the oven (@100 °C for 3 hours). Are they still safe to eat, or should I throw them away?

Quick Answer about "Re-Heat meringues after having them in the fridge for a long time?"

Try not to defrost your meringues in a humid environment, as they will easily absorb the surrounding moisture. This will soften them on the outside. If you're going to reheat your meringues, preheat your oven to 250 °F (121 °C) and then heat your meringues for 15 to 20 minutes.

Can you put meringue back in the oven?

Your meringue is gummy. High humidity can make meringue gummy textured. If this happens, place the meringue back in a 275-degree oven for 30 minutes to dry it out and make it crisp again.

How do you keep meringues from going soft?

If you want to stop your meringues from going soft quickly, make sure you have the proper proportions. Sugar acts as more than just a sweetener in this case. It helps to draw out moisture from the egg whites and also to stabilize the entire mixture.

How do you dry sticky meringues?

The sugar in the meringue pulls moisture from the air. Too much moisture means sticky meringues. Linda Jackson and Jennifer Gardner say the trick is to leave the meringues in the oven after baking. Turn the heat off and let the meringues finish drying, undisturbed, for three hours or even overnight.

Can you store meringue cookies in the fridge?

Can I put meringue cookies in the refrigerator? You can store them in the fridge, as long as they are kept in an airtight container. The way to keep them crispy is not allowing any humidity to hit them.
