Macadamia nuts in Malaysian cooking

Macadamia nuts in Malaysian cooking - Nuts in Round White Bowl

I've seen that macadamia nuts can be used as a substitute for candlenuts in Malaysian cooking. Is it a 1:1 substitution or do you need more macadamias. I'm not familiar with candlenuts, but pictures suggest they are larger than macadamias.

The only way the size really matters is if you're counting the nuts - unless a single nut is large enough to account for a fair proportion of the total. Weight for weight 1:1 should be good. Volume for volume 1:1 would be a good start but you may want to adjust to suit you in the future.

If you were using larger nuts than the recipe called for, halving then (or chopping them) might be a good idea.

Can macadamia nuts be cooked?

To toast macadamia nuts, spread nuts in a single layer on a baking sheet and place in a 350 F preheated oven, toasting until golden brown for about 12 to 15 minutes. Once done, let the toasted nuts cool down before grinding or chopping to prevent them from becoming oily or pasty in texture.

Is candlenut same as macadamia?

Candlenuts (Aleurites moluccana) are a relative of Macadamia nuts and resemble them in appearance and in texture. They have a hard furrowed shell and the nuts are yellow, waxy, and brittle, much like their Macadamia cousins. They are so named because they used to be used to make candles.

Can you fry macadamia nuts?

You can also stir fry macadamias in a little macadamia oil. Use a high heat and keep the nuts moving around the frying pan or wok until they have coloured a little.
