I've been trying to make a creamy coconut yoghurt in an incubator. Ingredients:

  • Water
  • Coconut milk powder
  • Small amount of store-bought coconut yoghurt

The first time it came out too thin. The next time I used: less water, 1/4-1/2 teaspoon of xanthan gum (for about 800ml of yoghurt), and increased the incubation time. The result was far too thick, like hard-set jelly. Later some watery stuff separated from it (whey, I suppose). It was fine as a dessert but completely lacked the texture I was after.

I want to try again, but I'd like to know what I did wrong last time. Was it most likely to be too much fat, the gum, or the longer incubation time?

What is the consistency of coconut yogurt?

Like regular yogurts, coconut milk yogurt has a thick, creamy texture and slight tanginess from the probiotics. It will also usually have a slight coconut flavor, depending on which coconut milk you use and whether you add any toppings to it.

Is coconut milk yogurt supposed to be watery?

During this time, the milk will separate and if you are fermenting in a clear container you will see clear liquid on the bottom. This is normal, do not be concerned. After 24 hours the milk will have a yogurt taste and will have thickened somewhat but will still be fairly thin.

Why is my coconut yoghurt fizzy?

It's OK to scoop it out with one once it's done fermenting, but the metal and probiotics will react and make the yogurt fizzy and weird if you do it before the fermentation process. (I know from experience.) Depending on the temperature and humidity in your home, this could take 24 to 48 hours to ferment.

How long should I ferment coconut yogurt?

Mix the coconut milk and coconut yogurt in a quart-sized jar. Add a loose-fitting lid and ferment at room temperature overnight. Stir the yogurt well and refrigerate the jar for at least 24 hours. Eat the yogurt in smoothies, with fruit, as a topping or dressing, and more.
