Can I use granulated sugar instead of demerara sugar
I need demerera sugar for the outside layer of my shortbread cookies. I have none. Will regular granulated sugar work? Will it burn?
Note: not actually my question, was posted as a now-deleted answer to another question.

Yes, it will work just fine, but it won't have the same color or the slightly molasses flavor of demerarra. It also has a finer crystal size, usually, so the texture will be a little less distinctive.
The closest substitute for this purpose, if you happen to have it, is sanding sugar--but I imagine that not everyone keeps that on hand. It has a large crystal size, and so presents a nice crunchy topping on muffins or shortbread or similar.

Quick Answer about "Can I use granulated sugar instead of demerara sugar"
Substitutes for demerara sugar include any type of brown sugar, particularly light brown sugar, turbinado sugar, or muscovado sugar in equal amounts. (Dark brown sugars will add a stronger molasses flavor.) You can also use granulated sugar, but there will be a flavor and texture difference. Can I use regular sugar instead of demerara sugar?
Granulated sugar can also be used as a substitute for demerara in a pinch. You can swap it out measure for measure. Since granulated sugar has a more delicate texture (and no molasses flavor) expect some texture and flavor differences in your recipe. Can you use regular sugar instead of brown sugar?
Plain white sugar. When all else fails, you can replace brown sugar with an even measurement of granulated white sugar without fear of ruining your recipe. White sugar lacks the same rich flavor that brown sugar adds, but depending on the type of recipe, you may not notice much flavor change at all. What is the difference between demerara sugar and white sugar?
Demerara sugar is less processed than regular, white sugar and retains trace amounts of vitamins and minerals. Yet, both types are composed of sucrose, have equal calories and a similar effect on blood sugar levels. Though demerara sugar may be slightly healthier it should still be used sparingly. Can you use golden caster sugar instead of demerara sugar?
It's the same as normal caster sugar, but it's unrefined, so has more caramel flavours. Demerara/raw sugar: darker than golden caster sugar and with a more intense flavour, demerara works well in coffee and sprinkled over sharp fruits such as grapefruit. What you need to know about the different types of sugar | Your Morning
