Will soaking chicken in milk hurt the chicken - Vegetable Salad on White Ceramic Bowl

I'm trying a new recipe and I was told to soak my boneless skinless chicken thighs in milk with a little spices. Let them soak for a while then take them out of the milk and then drop them in seasoned bread crumbs. Cook for about 20 minutes with foil on and another 10 without foil. It sounded good so I am going to try it. Does this sound like it should work?

Soaking chicken in milk or buttermilk in the refrigerator overnight is a common practice when making Southern-style fried chicken. This practice supposedly tenderizes the chicken through the actions of enzymes naturally present in the milk. Yoghurt is used in a similar way in many Middle Eastern and southern Asian food ways.

The milk can be used alone, but is often seasoned with onions, garlic, or spices.

What does Soaking chicken in milk do for the chicken?

The calcium in milk is thought to kick-start a natural enzyme in the chicken that helps it tenderize. It also breaks up the acidity and heat. (That's true for non-dairy milk, like coconut milk, too.) As an added bonus, the milk creates a creamy sauce that will keep a roast chicken even juicier.

How long should I soak chicken in milk?

Cut the chicken into frying pieces. In a shallow bowl beat the eggs and then stir in the milk, salt, and pepper. Soak the chicken in the milk mixture for 5 to 10 minutes.

Is it good to marinate chicken in milk?

Yes, you can marinate chicken in regular milk as milk has lactic acid and calcium in it. While just mildly acidic, milk is known to break down and tenderize the chicken effectively, thanks to the presence of calcium. Apart from this, marinating in milk produces a unique texture.
