I love a recipe that I have tried which is for 500g of chicken but now I want to do it for 2kg which is an additional 1500g.

My question is do we increase the marination ingredients according to the weight/size of cooking? In a normal recipe i would say yes but not sure about marination as marination is sort of liquid and what to do with left over liquid of marination after mariation is done?

How do you increase marinade?

Tenderize meat with a fork before marinating to increase the surface area on which the marinade can impart flavors. Place marinating meat in the refrigerator to keep it in the safe temperature zone. Marinate food in a Ziploc bag with air removed to help the marinade soak into the entire surface.
