My dad brought 2 bottles of mayonnaise from Kuwait. When we opened the box, it looked like water/oil had come up above the other contents.

How can I fix this?

Best Answer

Your mayonnaise probably got a little too hot in transit.

Mayonnaise is an emulsion of oil and water. That is, an emulsifier is added to a water-based ingredient that effectively coats droplets of oil and allows those droplets to dissolve into the water instead of coalescing and floating to the surface.

Lecithin is the most common emulsifier used. It is found abundantly in egg yolks.

The emulsion can be damaged if the mayonnaise is heated. When this happens the oil coalesces and you are left with a vinegary base with oil floating on top. Yum.

To fix it you have to reform the emulsion. There are many answers here about how to make or fix homemade mayonnaise. Briefly: You beat an egg yolk well with the water-based portion and then slowly drizzle the oil in while beating like mad until the mayonnaise is thick and white again.

The whole point of making homemade mayo is to use better quality oil and vinegar or incorporate different flavors. It really isn't worth your time trying to save commercial mayo.

So, if you have added too much oil, the remedy is simple: place a small amount of your broken mayonnaise in a clean bowl and add a few drops of lemon juice or vinegar. How do you fix separated store bought mayonnaise?

If your mayonnaise remains a bit thin after the initial whisking, or if it's broken and separated, whisk in two teaspoons of boiling water. The hot water will help the yolks to set and re-emulsify with the oil, bonding the ingredients back together again.

Why did my store bought mayo separate?

A.: Your jar of mayonnaise likely has spent too much time in the coldest part of your refrigerator and probably got frozen at some point. This often happens when the jar gets pushed to the back of the refrigerator and forgotten. Freezing will cause mayonnaise to separate.

What are the possible reasons of a broken mayonnaise and how can it be repaired?

If your mayonnaise breaks, don't worry (it's happened to all of us). It can be fixed. Grab a fresh egg yolk, and slowly beat your broken mayonnaise into the yolk. The fresh yolk will help to re-emulsify the sauce, bringing everything together and making for a smooth and happy sauce.

Answer 2

Use a stick/immersion blender to give the mix a good mix without adding any other substance to the mayo. It should stabilize this way and I would suggest to keep the mayo in the refrigerator.
