Question about mirror glazes and freezing

Question about mirror glazes and freezing - Low angle side view of young bearded male in casual shirt standing in bathroom and looking at with frown mirror in morning

I'm trying my hand at a layered mousse cake with a mirror glaze (I guess this is an entremet?). I've read several places that it is advisable to freeze the cake prior to glazing. My question is then: am I supposed to eat the cake frozen? Seems like it would be hard? Or should I let it thaw in the refrigerator? If so, for how long?

Best Answer

You want to glaze the cake when it's only just frozen: a couple hours should do, all you want is for the surface to be cold enough to fix the glaze in place. Once you've glazed it, leave it in the fridge just a few minutes, mousse doesn't take long to defrost.

How do I store it? Yes, you can make it a few days in advance. To store, cover with cling wrap, ensuring the cling wrap is touching the surface of the glaze & refrigerate. Best to keep it in a heat-safe bowl/jug so that, once you're ready to use it, you can pop it in the microwave to heat it up.

Why did my mirror glaze not stick?

Condensation on your frozen cakes and pastries will prevent your chocolate mirror glaze from adhering to the surface, causing it to slide off. To avoid this, only take a few cakes or pieces of pastry out of the freezer at a time and glaze them immediately. Then move on to the next batch.
