My cake falls while baking - Sliced Cake on Plate

I have been trying to follow some recipes in the book "The European Cake Cookbook" by Tatyana Nesteruk.

Several recipes have a similar style which is... beating 6-7 whole eggs with sugar for about 5 minutes until "pale and voluminous". Then fold in flour and baking powder.

I find that these cakes consistently seem fine when they go into the oven, but they consistently collapse during the baking process. Collapse as in 1/3 to 1/2 of their height compared to when they entered the oven.

A specific example from a recipe: 6 large eggs (btw, my eggs are 68 grams each) 150 grams sugar 1 tsp vanilla extract * whisk together on high speed for 4-6 minutes until pale and voluminous

Sift these dry ingredients into the egg mixture and gently fold in:
  125 grams all purpose flour
  25 grams almond flour
  1 tsp baking powder

Bake at 177C for 20 minutes

Why do cakes fall when cooking?

A cake batter can fall in the center if the batter is either too moist or too dry. A batter that is too moist will rise rapidly, then sink as it cools down. A batter with too little moisture will harden and fall in the center.

How do I keep my cake from falling?

Too much leavening agent like baking soda or powder can cause a cake to rise too high too quickly. The gas from the leavening agents builds up and escapes before the cake bakes through in the center. This causes the center to collapse and makes your cake layers sink in the middle.

Why do my cakes rise and then fall?

Too Much Leavening -- As counter-intuitive as it might sound, adding too much baking powder, baking soda, or yeast to a cake will cause it to sink as the amount of air that is created within the cake will be more than the structure can support and the whole thing will come crashing down.
