Other than US FDA definition, are there other standards for vanilla extracts? - Young Man Hugging Other Man Tenderly

Is there a European standard for example for what could be sold as vanilla extracts? The only definition of concentration and ingredients appears to be in US Code 21 CFR 169.175.

There's not really a European equivalent for the FDA's definition of extract (by ethanol percentage). Instead, the EU specifies what constitutes natural vs 'vanilla flavouring' (euphemism for 'artificial').

See the EU's white paper on it here (notably page 15): AUTHENTICITY OF VANILLA AND VANILLA EXTRACTS

Also, in plainer speak, info on vanilla industry standards between the US and EU here.

Additional reading: the EU directive ISO 9235 specifies what can be listed as artificial/natural and covers vanilla/vanillin.

What is FDA regulations for vanilla?

The FDA intervened and defined what a “pure” vanilla extract classification really is. It stipulates that pure vanilla extract must contain 13.35 ounces of vanilla beans per gallon of liquid and be 35% alcohol. The agency also limits other ingredients outside of vanilla beans and alcohol.

What category does vanilla extract fall under?

Pure vanilla extract is also called “Category 1” under FDA guidelines.

How can you tell the quality of vanilla extract?

If it says Vanilla Extract on the label, it was made with vanilla beans, alcohol and water. If it says Vanilla Flavor, it is still pure vanilla but made with glycerine or propylene glycol instead of alcohol. This is a reasonable substitute for people who want an alcohol-free flavor.

Does the quality of vanilla extract matter?

The answer is really up to you! While we love good-quality pure vanilla, in my opinion, the right choice mostly depends on what you're making. If you're making a dessert like pudding, custard, candy, or even a delicate cake, where the flavor of vanilla will stand out, go for the pricier pure vanilla extract.
