I forgot to add cream of tartar to my egg whites as inwas making a chiffon cake. what happens if you missed out adding cream of tartar to the egg whites for your chiffon cake recipe. will it alter the taste, texturre or fluffiness ofvthe cake?

Best Answer

It will most likely turn out fine. Cream of tarter is sometimes added when beating egg whites to enhance the stability of the foam that you form. The egg whites beat into peaks on their own, but the cream of tarter is an accelerator of this process and also a bit of a preservative of the structure when you're folding in the rest of the batter. A bit of an "insurance policy" if you will.

And no, it won't affect the taste either.

Why did my chiffon cake deflate?

Chiffon cake can shrink and deflate for several reasons. First, the pan had a non-stick coating or if it was greased. The best pan to use for a voluminous cake is an aluminum, un-greased chiffon pan without a non-stick coating. Second, the cake can shrink and deflate if not completely cooled immediately after baking.

Why did my chiffon cake not rise?

Check oven temperature: When the oven temperature is too low, the cake will not rise to its optimum height. It's also possible that your oven setting doesn't display the actual oven temperature. Get an oven thermometer to place it in the oven and test the actual oven temperature at 4 corners and center.
