I've done a lot of microwave baking (and have created some delicious treats!), however I've never found a way to get a crust with the microwave.

Now I understand the science behind a microwave and realize that there's no way to crust the outside of a loaf of microwave bread or to make cookies not melt everywhere. However, I have tried things like using some egg wash (it gives a bit of texture to the outside, but it's not quite a crust) or spraying with water/oil mid-baking.

Has anybody found the holy grail of baking in the microwave?

Not an complete answer but a clue-

I have noticed that some hot pockets will come with a cardboard cage that seems to be lined with very thin foil. In the microwave the hot pockets are actually browned. It would seem that the foil is able to heat up past 212F and do the job.

I haven't been brave enough to experiment because of the danger of fire etc. Good luck on your quest.

Can I cook pastry in a microwave?

Microwave on MED 6-9 minutes. Check for doneness, let sit 2 minutes (it will continue to cook a bit after you take it out of the microwave). Use in any pie recipe requiring a baked pie crust.

How do you make a pie crust in the microwave?

Prick the edges of the crust with a fork to allow steam to escape as the crust cooks. Set your microwave oven to high power and cook the crust for five to seven minutes, until the dough changes to an opaque color and an inspection of the bottom of the pie plate reveals that the crust is dry.

Can you microwave frozen pie crust?

Use a microwave-safe bowl or plate to place the frozen pie crust on top of. Set the microwave to 30% power or the defrost setting, and nuke for 10 to defrost it properly. Double check the pie crust to see if it is able to fold. If necessary, flip the pie dough over and continue defrosting for another 10 seconds.

Can a pie be baked in microwave?

Microwave for 7 to 10 minutes on high, or until juices start bubbling through slits in crust. (If you're preparing an unbaked, frozen pie, transfer it to a 9" glass pie plate and microwave for 13 to 16 minutes on high.) Transfer the pie to your preheated oven and bake 8 to 10 minutes, or until golden brown.
