I forgot to add butter to my dough when making king cake, I have kneaded it and left it to rise, will it ruin the dough to mix the butter in and then knead and let it rise again?

Best Answer

Unfortunately, if you attempt to combine the butter into the already risen dough, the dough's structure would most likely get ruined.

I wouldn't stress too much over the forgotten butter in the dough though, as the filling will consist of butter as well. Also, you may be able to salvage some flakyness by gently folding in thin sheets of butter into the dough.

What happens if you forget to add butter to dough?

No, you shouldn't be adding butter at this stage, it will take too much kneading and undo the rising. Whatever it is you were baking, just go ahead and bake it this way. There are many breads which don't use any fat at all. The taste will be different than with butter, but it will still be a good bread.

What happens if you forgot to put butter in a cake?

If you leave the butter out, it will affect the taste slightly and will cause the cupcake to stay smaller and more dense, as you noted, but it will still be perfectly edible and probably quite tasty.

Can you add butter after kneading dough?

Softened butter is mixed in only after the dough has been formed and kneaded to develop the gluten. Once the gluten has been formed, it remains intact, and the butter has less effect on its strength. Other brioche recipes add softened butter directly to the flour before the dough is formed.

What does adding butter to cake batter do?

It allows for steam and carbon dioxide to be trapped in the batter as it is bakes, which causes your cake to rise. The butter also helps to create a light and tender texture in cake batter. In the all-in-one method, liquid butter and other liquid ingredients are mixed with dry ingredients in a single step.

That’s a shame after you did all that work. (oops)
I’d make a little melted butter and vanilla and brush the cake w/that (lightly) before you frost it.
