I could only find a couple of written tutorials and they weren't very good. Can anyone explain it to me or provide a good tutorial?

What is french cut shank?

Basically a french cut just means that some meat has been stripped away from the shank to reveal the bone. This makes for a nicer presentation, you know like the little lamb chops that look like lollipops?
