How long is too long to allow for a dry rub with small amounts of salt to sit on a pork shoulder and a brisket. I usually let it sit overnight, but am thinking of extending the time to 24 hours.

Twenty four hours will be fine. Most recipes I see suggest 8 to 24 hours, but if you look around on the BBQ forums, you'll find people who rub and leave in the fridge for up to 3 or 4 days.

For the best results, a rub needs time to work its flavor magic. So how long do you leave dry rub on steak, chicken, turkey, or pork? Allow the BBQ rub to rest on the food 15 minutes to 2 hours (and up to several hours if you've got time) before cooking.

Can you dry rub for too long?

A rub left on for a longer period will become more mushy and more like a paste or a glaze/sauce, while a rub put on fresh before cooking won't have time to become as moist. You will get slightly more flavor penetration with a longer rest, but there are diminishing returns there too after the first hour or two.

Can I leave a dry rub on overnight?

If you're planning to enjoy the slab of ribs with purely the dry rub, overnight is best. What is this? You don't want to go longer than overnight (10-12 hours) though.
