I'm designing a sandwich and I want to include a fruit relish as a topping. Are there methods that don't include pickling?

Best Answer

Fruit relishes (including salsas, chutneys, and plain sauces like applesauce) can be made without vinegar. But they almost always include some extra acid - if not vinegar, then usually citrus juice.

The acidity balances the sweetness of the fruit, and it preserves the color.

So you can make a fruit relish, substitute lemon or lime juice for the vinegar, and use it. But of course, without a full pickling process, the fruit relish will only have a limited life in the refrigerator.

What Is Relish Made Of? There are three key ingredients in relish: produce (fruits, vegetables or a mixture), vinegar, and sugar. Additional ingredients are often added, including spices like mustard seed to make old-fashioned mustard pickle relish or mayonnaise to make crisp onion relish.

What is traditional relish made from?

A relish is a cooked and pickled product made of chopped vegetables, fruits, pickles or herbs and is a food item typically used as a condiment to enhance a staple. Examples are chutneys and the North American relish, a pickled cucumber jam eaten with hot dogs or hamburgers.

What is the traditional relish?

It's a preserve that contains finely chopped vegetables, fruit, or sometimes both in a vinegar mixture. It's commonly used like a condiment, as a spread on sandwiches or stirred into sauces, but has a chunkier texture than a traditional condiment like ketchup or mustard.
