I’ll pour the ganache over the cake, then freeze the cake with the ganache on top. Will it freeze ok together?

Can you freeze a cake with ganache on top?

If you have used all dark (bittersweet) chocolate then the ganache should freeze firm. But of you have used part dark chocolate and part milk chocolate then the ganache may stay a little soft when frozen.

Can I put ganache in the freezer to set?

The general rule is that classic ganache may stay at room temperature for up to 2 days then must be refrigerated. If you'd rather be safe (which I recommend), keep it refrigerated for all storage. Ganache can be frozen for up to 1 month.

Can you freeze chocolate covered cake?

You can freeze just about any cake after they've cooled completely. Mega flavorful cakes such as banana cake, chocolate cake, carrot cake, and pumpkin cake freeze and thaw beautifully when wrapped in a couple layers, as detailed above. I find their flavor is even better after the freezing/thawing process!

Ganache does freeze fairly well. You might notice a slight texture change with the ganache being a little grainy but you can give it a mix or blend to mix this backup.
