I have been sprouting my beans for three days now I am not sure if it is ready to harvest and is the color normal and what is the best way to store it? I've attached photos. Thank youenter image description here

I can't see anything wrong with your sprouts as far as colour. If you're referring to the blush of the beans, yours are a bit pinker than most I've seen but still normal. I've spen them ranging from an almost white tan to blush. Since I don't know whether you kept yours in utter darkness, so I can't say whether it's related to light levels. It's also possible that a number of different mung bean cultivars are used for sprouting (since the majority of food we eat has countless cultivars). If so, possibly different cultivars might show different variations in colour.

I'm surprised that your sprouts are only 3 days old though. They already have developed leaves and that doesn't usually happen that quickly. Perhaps a little warmer than usual? That might even account for colour variations too.

There's no harm eating them with developing leaves but they taste milder when the leaves just start peeking out for the two halves. I gave up sprouting mung beans as I never could figure a good way to get rid of most if the loose skins.

What color should bean sprouts be?

Choose bean sprouts with a pale color and a crisp, firm texture. Avoid ones that look brown, limp, wilted, or slimy. You should also avoid ones that have musty smell. Make sure that your bean sprouts are refrigerated; otherwise, they are susceptible to bacteria.

Are bean sprouts supposed to be brown?

If you're unsure, it's best to discard them before they spoil. A dirty bean sprout may contain bacteria or mold. If they're not healthy, they'll be too slimy. They have withered foliage, discoloration (brown hue), mold, or a rusting jar and container.

Why is your bean sprout greenish?

If the sprouts are exposed to light while they are growing the leaf tip will turn green on days 5 and 6. If the sprouts are kept in the dark, they will remain white, like the bean sprouts from China. I like my bean sprouts to be a bit green. Mung beans and sprouting lentils grow faster than some other beans.
