Why is my Frozen Yogurt Grainy?

Why is my Frozen Yogurt Grainy? - Black Dog Licking Frozen Yogurt in a Cup

I used Cal Peternell's recipe:

1 cup of whole milk
1/2 cup of half and half
1/2 cup of sugar
pinch of salt
3 cups of whole milk yogurt
zest and juice of a half lemon

BUT... Instead of half and half I replaced it for cream because this is what I had at the moment. Could that be the culprit?

Quicker freezing = smaller ice crystals. One hour is a long time, that likely contributed to your grainy texture. If the Breville ice maker is your only option, make sure your base is as cold as possible before using the ice cream maker. That means refrigerating it for several hours in advance. You also might want to strain your base through a fine sieve first. This would help to ensure that the graininess is not coming from your ingredients.

Is frozen yogurt grainy?

When yogurt is frozen then thawed, it can separate and become grainy and watery. The yogurt may also take on an acidic taste and some of the live bacterial cultures abundant in natural yogurt may be destroyed by the freezing process.

How do you fix grainy yogurt?

Setting the yogurt at a lower set temperature of 104 F will produce acid at a slower rate, with less probability of shocking the dairy proteins. So if you are having trouble with a grainy texture, try setting your yogurt at a lower set temperature with the same culture. You may be surprised at the results.

Why does my yogurt have a grainy texture?

When the yogurt base is pumped into the fermentation vat, it will immediately coagulate (or directly acidify), resulting in very stable flocs of milk protein. This curd will not re-dissolve in the base during incubation and may not be broken down by the smoothing device, resulting in a grainy product.

How do you keep frozen yogurt from crystallizing?

Now to prevent your froyo from crystallizing, you can make golden syrup. All you need to do is boil some water, add sugar and lemon wedge to caramelize the sugar and let it sit for 45 minutes. Golden syrup is just one of the substitute sugars that you could use in making your froyo.

The first culprit is the recipe ratios. You have only 6% of fat and 16% of nonfat solids. This is way too low, and unlikely to ever produce smooth frozen yogurt. So, change the recipe, you won't get far with this one.

Second, for a good frozen dessert, there are many things that have to go right at the same time. We have tons of old questions on which ones these are, so for them, please refer to Preventing Crystalised Dairy Ice Cream, especially the questions in the Linked section in the right column.
