Hi guys I need some quick advice. I am about to slow cook a whole chicken and I and one question: Should I put the vegetables in while its slow cooking or will it be too mushy?

If you're making, for example, chicken soup, you add the "flavoring vegetables" (onions and celery, in my experience) right at the outset, with the understanding that you'll fish them out and discard them at some point, after they've given up their flavors to the broth. The actual vegetables you want to eat go in quite a bit later. I'm pretty sure the same procedure should work for your slow-cooked curry, but I've never made curry, so temper this advice with your own good common sense.

How do you make a whole chicken curry?

Place the chicken in a large roasting tin, place \xbd of a lime in the cavity. Brush 1 tbsp of the curry paste all over the top of the chicken, then drizzle on the 1 \xbd tbsp of olive oil and sprinkle on the \xbd tsp each of salt and pepper. Cover the chicken in foil, loosely tented, and place in the oven for 1 hour.

You do not need to add any liquid. Chickens today typically have some solution added, so they rarely need added liquid. At the end of the cooking time, the meat will be tender, practically falling off the bone.

Always cook your boneless skinless chicken breasts on LOW for the best results. I do not recommend cooking boneless chicken breast on HIGH, as it will become very dry, even if you check it early.
