What's the best material for a durable muffin pan - Top view of crop anonymous female employee working on wooden weaving loom machine with stretched durable colorful threads in workshop

I make two or three dozen muffins a day for various customers. I don't like to use disposable cups, so I grease the pan each time. No matter what I do, after a certain time, my muffin pans end up giving a subtle metal taste to my muffins.

I was wondering what would be the most appropriate material for a muffin mold to avoid this situation. I'd be ready to pay the price for a pan that would last significantly longer... Bug which one should I choose?

First, I concur with @rumtscho that the pans may not be the culprit and second, I do not make muffins in anywhere near the quantities you report, but I have had great luck with silicon muffin trays. They clean well and release the muffins nicely.

Quick Answer about "What's the best material for a durable muffin pan"

Aluminum is perhaps the best material for even heat distribution, especially if it is anodized. Stainless steel bakeware, with an inner core of aluminum or copper, helps ensure even baking. Silicone muffin pans are not as good at conducting heat as metal pans.

Are silicone or metal muffin pans better?

The problem is that silicone doesn't tend to cook as evenly, and it isn't as rigid as metal, which can make it harder to handle. Silicone works best as a nonstick coating on steel pans. Ceramic is also an excellent coating because it is resistant to corrosion and scratching.

What is the safest material for muffin pan?

The safest muffin pans are made from materials that are free from potentially toxic chemicals that can leach into food. The best non-toxic muffin pans are made from stainless steel, 100% ceramic, pure silicone, toughened glass, or stoneware.

Is ceramic muffin pan better?

If you're a frequent baker who needs a non-stick pan that can stand up to the test of time, you should consider a ceramic coated muffin tin. Like metal tins, these pans allow for even heat distribution and are highly durable.

What is the best material for a baking tray?

Aluminum. Aluminum is a great heat conductor, which means that the metal is good at giving off the heat it absorbs and transferring it to what you are baking. This is why aluminum bakeware is so popular.
