How should I store vacuum-sealed sliced salami?

How should I store vacuum-sealed sliced salami? - Woman in Floral Dress Checking On A Robotic Vacuum Cleaner In A Shop

I had a whole Genoa salami that I sliced into very thin slices. I would like to save the remaining meat for consumption later, so I separated them into approximately 1-pound bags and vacuum-sealed them for storage.

How should I store the bagged salami, and how long can I expect it to keep? The original salami was rated to be shelf-stable with no refrigeration for about 8 months judging by the date on the label, but I'm not sure how that changes once it is sliced.

Best Answer

You can store the vacuum sealed bags in the refrigerator or the freezer. It would have been better to leave the salami whole for long term storage, simply to reduce the impact of oxidation and flavor loss. The only other thing that changes with slicing is the potential that you contaminated it, either by touching it or because your equipment was not clean. If this is the case, you will observe mold forming on the salami. If that happens, discard. Otherwise, the only worry you have is flavor loss. Frozen, I would say you have several months. Refrigerated, you'll experience flavor changes after a few weeks.

Does vacuum packed salami need to be refrigerated?

If you purchased a package of vacuum-sealed cut salami, then you should put it in the refrigerator even when it's not opened. Namely, anaerobic bacteria can penetrate the meat even when there's no air in the packaging. So if you want to be sure salami doesn't go bad, the best option is to keep it in the refrigerator.

How do you store sliced salami in the fridge?

To maximize the shelf life of salami deli meat after opening, keep refrigerated in airtight containers or wrapped tightly in plastic wrap or aluminum foil. Properly stored, sliced salami deli meat will last for 3 to 5 days in the refrigerator.

Do I need to refrigerate vacuum-sealed?

The removal of oxygen from a food package does not eliminate microbial growth. Perishable (whether it is raw or cooked) meats and poultry in vacuum packaging cannot be stored at room temperature. They must be kept either in the refrigerator at 40 \xbaF or below, or for longer storage, in the freezer at 0 \xb0F or below.

How do you store unopened salami?

Salami is shelf-stable, so it doesn't require refrigeration, but it will continue to dry out and harden as it ages. For best results, keep it wrapped in butcher paper and store in the fridge. We strongly recommend against freezing or placing salami in an airtight container. This is a product that needs to breathe.
