Someone gave me more peppers than I can eat and I'd like to freeze them for at least a few months, a year at most. Am I wasting good peppers by doing that?

Best Answer

It depends on what you plan to use them for. They won't ever be crisp again after freezing, but if you're cooking them anyway, they will be fine. I do this all the time with leftover peppers. You should certainly remove stems and seeds and cut them into whatever size you will need for cooking.

Does freezing peppers ruin them?

Peppers need to be seeded and diced prior to freezing. Also, peppers contain a lot of water. If not frozen correctly you will end up with a bag of ice rather than diced peppers. That ice can alter your recipes and ruin your peppers as well.

Do peppers lose spice when frozen?

No, spicy peppers will not lose any heat when frozen fresh. To retain as much heat and flavor as possible, try to freeze your peppers the same day they are picked.

Can you freeze uncooked peppers?

Peppers are one of the vegetables you can quickly freeze raw without blanching first. Thawed peppers retain some crispness and can be used in cooked dishes such as casseroles or eaten raw.

Can you freeze peppers whole?

If you can spare the space in your freezer, freeze some whole peppers, too. Just slice off the top of your peppers, and pull out the cores. Then, flash freeze the tops and the peppers separately, and transfer them to freezer bags, once they're frozen.
