Creaming methd for cookies. Help?
I heard its a must method for cakes. But is it also a must for cookies? Cakes i understand since it needs to be light and fluffy. But cookies? Like sugar cookies or tuiles?
Best Answer
There are many cookies which are made via the creaming method, as it helps these cookies achieve the proper texture and leavening.
It is far from the exclusive method for cookies; there are many cookies which are made by alternate methods.
Many cookies, for example, are made with melted butter which does not have the ability to trap air the way solid butter or shortening does.
There are other cookies, such as French macarons, which have their structure and leavening from egg whites.

Quick Answer about "Creaming methd for cookies. Help?"
The creaming method for cookies is a way to mix our butter (or fat) and sugars together to help leaven (make rise) our cookies in the oven. It helps to properly cream (aka) mix our fats and sugar together. Creaming can also help increase the volume of our cookie dough (aka the yield of our cookies). Why is creaming the sugar important?
Creaming butter and sugar together adds pockets of air that aerate the batter. This air puffs up cakes and other homemade treats as they bake, giving them a lighter and more appealing texture. The air is added by beating room-temperature butter with sugar on high speed. How to Make Cookie Dough with the Creaming Method
