Can I cook my apple butter on high when it suggests low?
I am cooking apple butter in a slow cooker and the recipe calls for 1 hr on high and then 9 hours on low. My slow cooker only cooks on high.. Can I cook it on high for a shorter amount of time without compromising the flavor, etc? Thanks

While different cookers have different opinions about how hot "high" and "low" actually are, I still wouldn't gloss over such a large discrepancy, unless I knew enough to make the call.
However, you can easily lower the temp of your crockpot on it's high setting. Try putting a terrycloth rag between the metal case and ceramic pot. This will reduce the heat transfer from the coils to the food, resulting in a stable but lower temp. Use a thermometer to check before/after temps and adjust the amount of "insulation" to get the temp you want. Low on my cheap consumer crockpots is around 120-140F.

Quick Answer about "Can I cook my apple butter on high when it suggests low?"
Good apple butter should achieve a deep brown color and have the consistency of a thick jam. This apple butter recipe is best to start before you go to bed because of the time it takes to cook. You can speed it up by cooking on high, but like most slow cooker recipes, I suggest cooking on low.Is it possible to overcook apple butter?
Scorched apple butter is not a good thing and you might need to return to the apple orchard to pick more. By using the crock pot, the low slow cooking allows the apples to get the nice caramelized flavor and deep brown color. You cannot overcook apple butter in the crock pot. The flavors will only intensify. How do you know when apple butter is done cooking?
To test for doneness, remove a spoonful and hold it away from steam for 2 minutes. It is done if the butter remains mounded on the spoon. Another way to determine when the butter is cooked adequately is to spoon a small quantity onto a plate. How high heat can you cook with butter?
Only heat butter to 250\xba Fahrenheit or it will smoke, burn and turn acrid. Butter without milk solids can be heated up to 400\xba Fahrenheit without burning. Milk solids collect at the bottom of the pan as the butter melts. Why is my apple butter not getting thick?
Cook Apple Butter Longer Until It Has Thickened As long as evaporation can take place, the apple butter will continue to thicken throughout the cooking process. If, however, the lid is secured on the pot, the apple butter may have to cook so long to thicken that the taste will be affected by overcooking.Canning Apple Butter the Day After You Make It
